5 Ways to Use Zucchini

If you are anything like me, you have a TON of zucchini and you're just not sure what to make with all of it. You could preserve it all, but you would rather make it for dinner for your family each night. Well! Here are some great ways to use your zucchini and not get tired of it!



1. Slice it and Sauteé it!

This one is super simple. All you need is some butter or oil of your choice, some seasoning of your choice, and your zucchini. Start by washing your zucchini well, then slice it like you would slice a cucumber for your salad. Put your oil or butter in your pan. I prefer raw butter, myself. Then sauteé them until they are a good yellow color with a little char. You want them to be pretty flimsy. Once it is done, place it on a plate to cool, add a little salt and you're good to go! This is such a simple and delicious way to eat zucchini. My whole family loved it!



2. Mix it with Squash!

Another great way that we like to eat our zucchini is by cutting it up into cubes with a squash. After that we then sauteé them in raw butter - you can use butter or oil. We put garlic, salt, pepper, and parsley on them. This is probably our favorite way to eat zucchini. You want to make sure you use a good amount of parsley and garlic to really get the flavor. These will need to be cooked until they are almost mushy - sounds weird, I know, but you will thank me later!



3. Make Zoodles!

This is a great, healthy alternative to using pasta. Use a spiral tool of some kind to spiral your zucchini. If you do not have one, you can always cut it, it just takes a long time - trust me, I had to cut it last time because I could not find my spiral tool! Then you are going to put it into boiling water and cook it just like you would noodles. You want to watch it to make sure it does not overcook - it will become a mushy mess and that will not be something you really want to eat. After it has softened, drain it, and add any sauce and seasonings you like. We also added chicken to ours. Be creative!



4. Make Zucchini Pizza Bites!


These are a great, healthy alternative to using a crust. Cut your zucchini into slices, spray them with olive oil, place them on a pan, and pop them into the oven for about 5 minutes. Pull them out, add a tbsp of marinara sauce, add cheese and pepperoni on top, then pop them into the oven again for 2 minutes or until cheese has melted. If you try these, let me know!



5. Make Bread or Muffins!

There are so many recipes out there for zucchini bread and muffins. I plan to put one together soon - but until then, make sure to look up some bread and muffin recipes, because - YUM!



There are so many other great recipes out there to try. Get creative and try something new! There is nothing like utilizing one vegetable15 different ways! If you have way too much zucchini to cook, look into preserving it for later, or chop it up and freeze it.
